Creamy A.1.-style steak sauce
- 1 egg yolk
- 1/2 cup neutral oil
- 2 tbsp Worcestershire sauce
- 1 tbsp ketchup
- 1 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 1 tsp soy sauce
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 1/2 tsp sugar or brown sugar
- 1–2 tsp prepared horseradish
- 1 tbsp finely minced shallot or onion
- 1–2 tbsp water, as needed
- Salt to taste
Make it
- Whisk the egg yolk, Worcestershire, mustard, vinegar, ketchup, and soy sauce.
- Slowly drizzle in the oil while whisking continuously, making a mayonnaise-like emulsion.
- Mix in the garlic, onion, pepper, paprika, sugar, horseradish, and minced onion.
- Add water a teaspoon at a time until it's the consistency you want.
- Refrigerate for at least 30 minutes so the flavors come together.
For something much closer to actual A.1., I'd reduce the mayo/egg component and add tomato paste, vinegar, Worcestershire, raisin/molasses-like sweetness, and spices. The classic A.1. flavor is more sharp, sweet, fruity, and acidic than a mayonnaise-based steak sauce.
