Creamy A.1.-style steak sauce

  • 1 egg yolk
  • 1/2 cup neutral oil
  • 2 tbsp Worcestershire sauce
  • 1 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp soy sauce
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp sugar or brown sugar
  • 1–2 tsp prepared horseradish
  • 1 tbsp finely minced shallot or onion
  • 1–2 tbsp water, as needed
  • Salt to taste

Make it

  1. Whisk the egg yolk, Worcestershire, mustard, vinegar, ketchup, and soy sauce.
  2. Slowly drizzle in the oil while whisking continuously, making a mayonnaise-like emulsion.
  3. Mix in the garlic, onion, pepper, paprika, sugar, horseradish, and minced onion.
  4. Add water a teaspoon at a time until it's the consistency you want.
  5. Refrigerate for at least 30 minutes so the flavors come together.

For something much closer to actual A.1., I'd reduce the mayo/egg component and add tomato paste, vinegar, Worcestershire, raisin/molasses-like sweetness, and spices. The classic A.1. flavor is more sharp, sweet, fruity, and acidic than a mayonnaise-based steak sauce.
